Lenten Shepherd's Pie

Today I made Lenten Shepherd's Pie for dinner. It is very easy and is great for non-oil days. Here's the recipe:Ingredients:1 bag soy ground meat (morningstar or boca crumblers)3/4 cup tomato sauce1/2 bag frozen veggies (I prefer carrots and peas for this)5 slices veggie cheddar cheese5-6 potatoessalt & pepper2 T. margarine1/2 cup soy milkDirections:Peel, chop and boil potatoes. Place soy meat and tomato sauce in skillet and heat thoroughly. Place meat at the bottom of a greased pie dish. Layer frozen veggies on top. Lay cheese slices on top of veggies. When potatoes are cooked, mash them together with the margarine, soy milk, salt and pepper. Bake @ 350 degrees for about 40 minutes.
