Kalamata Olive Bread Recipe
Elizabeth asked for the Kalamata Olive Bread recipe I mentioned in Monday's post so here it is! Hope you enjoy it!
Ingredients
2 1/2 cups warm water
2 T yeast
1 T molasses
2 T olive oil
1 T salt
7 1/2 cups flour
1 c. kalamata olive, chopped
2 T rosemary
1 T sesame seeds
Directions
1. Place water, yeast and molasses in bowl, stir and let stand until creamy.
2. Add olive oil and salt. Mix. Add four 1 cup at a time until dough is too stiff to stir. Add olives and herbs.
3. Turn dough onto lightly floured surface. Knead, adding flour as needed until smooth and elastic. Place in well oiled bowl and coat. Allow to rise until double, about 1 hour or so.
4. Punch down, split into 2 and form 2 round loaves. Place on greased baking sheet. Spray with cold water and sprinkle seeds on top. Let rise additional 25-30 minutes.
5. Bake at 400 degrees for 45 minutes or until browned and sounds hollow when you tap on the bottom.
