Italian Love Cake
My cousin Jenny made this DELICIOUS cake while we were in Ohio this past week. It's called The Italian Love Cake, from what I've read it was traditionally served at weddings.This is the first time I ever had anything baked with ricotta and I can't believe what a delicious flavor and texture it added! I'll definitely be looking for more recipes using it. Ingredients:
- 1(18 ounce) box cake mix (any flavor, recommend marble)
- 1 3/4 lbs ricotta cheese
- 1 (6 ounce) box instant pudding mix (flavor depending on cake choice)
- 4 eggs
- 3/4 cup sugar
- 1 teaspoon vanilla
- 1 1/2 cups milk
- 12 ounces Cool Whip
Directions:
1. Mix cake according to directions
2. Pour into 9X13 inch pan
3. Mix ricotta cheese, eggs, sugar and vanilla.
4. Pour over uncooked cake
5. Bake at 350 about an hour, checking center to determine if done
6. Cool and frost with topping
Topping:
Mix pudding mix, milk and Cool Whip and spread on cooled cake.
