Lenten Orange Cake Recipe

In last week's Menu Plan Monday I mentioned the Lenten Orange cake I was making. Jenny asked for the recipe so here it is:


Lenten Orange Cake

Ingredients:

  • 3 1/2 cups flour
  • 1 T. baking powder
  • 1 tsp. baking soda
  • 2 tsp. cinnamon
  • 3/4 cup veg. oil
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups orange juice
  • 1 tsp. vanilla
  • 2 T. orange rind
  • 1 cup walnuts, chopped
  • 1/2 cup golden raisins
  • 1/2 cup orange marmalade

Directions:

  1. Beat oil, sugar, vanilla and orange juice until creamy.
  2. Add remaining ingredients.
  3. Pour into a greased bundt pan and bake @ 350 degrees for 50-60 minutes.
  4. While cake is baking, mix 1/2 cup powdered sugar and 1/2 cup orange juice to make a glaze.
  5. Remove cake from oven and immediately pour glaze over top (this will be bottom of cake).
  6. Cool cake and remove from pan and sift powdered sugar on top.
