Lenten Orange Cake Recipe
In last week's Menu Plan Monday I mentioned the Lenten Orange cake I was making. Jenny asked for the recipe so here it is:
Ingredients:
- 3 1/2 cups flour
- 1 T. baking powder
- 1 tsp. baking soda
- 2 tsp. cinnamon
- 3/4 cup veg. oil
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 1/2 cups orange juice
- 1 tsp. vanilla
- 2 T. orange rind
- 1 cup walnuts, chopped
- 1/2 cup golden raisins
- 1/2 cup orange marmalade
Directions:
- Beat oil, sugar, vanilla and orange juice until creamy.
- Add remaining ingredients.
- Pour into a greased bundt pan and bake @ 350 degrees for 50-60 minutes.
- While cake is baking, mix 1/2 cup powdered sugar and 1/2 cup orange juice to make a glaze.
- Remove cake from oven and immediately pour glaze over top (this will be bottom of cake).
- Cool cake and remove from pan and sift powdered sugar on top.
