Homemade Waffle Recipe

Since we've decided to do the 100-day real food challenge, I haven't purchased any frozen pancakes or waffles this year. We've been eating eggs and bacon or homemade waffles a lot. Last week, they loved the heart shaped pancakes with fresh fruit on top.I was so worried that we wouldn't have enough time for big breakfasts every day but it really hasn't taken much longer. I actually feel sort of guilty that I didn't do this more often last year. I love watching them get all excited when they ask what I'm making for breakfast each day. Ace actually told me that these breakfasts remind him of the "fun days" when he was home all the time. Sniff, sniff...So far the homemade waffles with fresh fruit and whip cream are at the top of their list. The recipe is one I've used since I got married and even though I've tried others, it remains my favorite.It's quick, easy and the batter can be stored for up to two weeks in the refrigerator, even though it doesn't even last a week in our house. Some people have told me that they bake the entire batch, freeze them and just pop them into the toaster later on. I think this is a great idea if you don't have time to bake them fresh every morning.

HOMEMADE WAFFLE RECIPE
  • 2 eggs
  • 2 cups flour, unbleached
  • 1 T sugar
  • 4 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 tsp. vanilla
  • 1/2 cup oil
  • 1 3/4 cup milk
  1. Preheat waffle iron and spray with non-stick cooking spray.
  2. Beat eggs until fluffy.
  3. Add remaining ingredients and mix until smooth.
  4. Pour batter onto iron and cook until golden brown.
  5. Add toppings. Our favorites include fresh fruit and whip cream or powdered sugar and syrup.
