Spinach Lasagna Rolls Recipe
Last week, I made these Spinach Lasagna Rolls. They're really simple to make and are really yummy! This recipe is a great way to get your kids to eat spinach. It's also a good way to add more green to your diet. You can use a combination of ingredients with these, too. You can add chicken, mushrooms, or whatever you want. I think next time I make them, I am going to use chicken and substitute the spaghetti sauce for alfredo. What do you think?Ingredients:
- 1 box lasagna noodles, cooked
- 1 15 oz. container Ricotta
- 1 10 oz. bag of frozen spinach, drained well
- 1/2 cup grated Parmesan
- 1 egg
- salt and pepper to taste
- 2 cups Mozzarella cheese
- 1/2 jar of spaghetti sauce
Directions:
- Pre-heat oven to 350 degrees.
- Boil and drain lasagna. You can add a little olive oil after it's drained to prevent them from sticking together.
- Pour enough sauce to lightly cover the bottom of a 9 x 13 baking dish and set aside.
- Mix Ricotta, Parmesan, spinach, egg, salt and pepper in a bowl.
- Lay lasagna noodles out flat on a sheet of waxed paper.
- Using a tablespoon, spread the ricotta mixture onto each noodle, leaving about an inch on each side.
- Roll them up carefully and place seam down in baking dish.
- Pour about a tablespoon of sauce over each one and sprinkle with Mozzarella.
- Cover with foil and bake for about 45 minutes or until cheese is completely melted.
Recipe yields approx. 10 rolls. Enjoy!
