Spinach Lasagna Rolls Recipe

Last week, I made these Spinach Lasagna Rolls.  They're really simple to make and are really yummy! This recipe is a great way to get your kids to eat spinach.  It's also a good way to add more green to your diet.   You can use a combination of ingredients with these, too.  You can add chicken, mushrooms, or whatever you want.  I think next time I make them, I am going to use chicken and substitute the spaghetti sauce for alfredo.  What do you think?Ingredients:

  • 1 box lasagna noodles, cooked
  • 1 15 oz. container Ricotta
  • 1 10 oz. bag of frozen spinach, drained well
  • 1/2 cup grated Parmesan
  • 1 egg
  • salt and pepper to taste
  • 2 cups Mozzarella cheese
  • 1/2 jar of spaghetti sauce

Directions:

  1. Pre-heat oven to 350 degrees.
  2. Boil and drain lasagna.  You can add a little olive oil after it's drained to prevent them from sticking together.
  3. Pour enough sauce to lightly cover the bottom of a 9 x 13 baking dish and set aside.
  4. Mix Ricotta, Parmesan, spinach, egg, salt and pepper in a bowl.
  5. Lay lasagna noodles out flat on a sheet of waxed paper.
  6. Using a tablespoon, spread the ricotta mixture onto each noodle, leaving about an inch on each side.
  7. Roll them up carefully and place seam down in baking dish.
  8. Pour about a tablespoon of sauce over each one and sprinkle with Mozzarella.
  9. Cover with foil and bake for about 45 minutes or until cheese is completely melted.
Recipe yields approx. 10 rolls.   Enjoy!
