Lenten Broccoli and Rice Casserole

I know the Apostle's fast is almost over and no one will want to think about lenten food for at least a month, but I made this broccoli and rice casserole by accident the other night and thought I'd share it anyway.

Broccoli & Rice Casserole

DH was supposed to have a late night at work and between getting the house ready before we leave for vacation, packing all of our luggages and preparing for our monastery's feastday, I wasn't planning on making a big dinner that night. Needless to say, he came home early. And was starving. So, I had to think of something quick and easy.Ingredients:

  • 1 large bag of broccoli steamers
  • 1 medium onion, finely chopped
  • 2 T olive oil
  • 2 1/2 cups rice, cooked
  • 1 stick margarine
  • 3 cups crackers, Ritz or Club
  • salt and pepper to taste
  • Vegan grated cheese

Directions:

  1. Steam broccoli and cook rice until almost done.
  2. Saute onions in olive oil until onions are translucent.
  3. Mix broccoli, rice, onions, salt, pepper and as much vegan grated cheese as desired.
  4. Pour into greased 9 x 13 baking dish.
  5. Melt margarine and add crushed crackers.
  6. Layer cracker mixture on top and bake casserole for 30-35 minutes.
