Lenten Broccoli and Rice Casserole
I know the Apostle's fast is almost over and no one will want to think about lenten food for at least a month, but I made this broccoli and rice casserole by accident the other night and thought I'd share it anyway.
DH was supposed to have a late night at work and between getting the house ready before we leave for vacation, packing all of our luggages and preparing for our monastery's feastday, I wasn't planning on making a big dinner that night. Needless to say, he came home early. And was starving. So, I had to think of something quick and easy.Ingredients:
- 1 large bag of broccoli steamers
- 1 medium onion, finely chopped
- 2 T olive oil
- 2 1/2 cups rice, cooked
- 1 stick margarine
- 3 cups crackers, Ritz or Club
- salt and pepper to taste
- Vegan grated cheese
Directions:
- Steam broccoli and cook rice until almost done.
- Saute onions in olive oil until onions are translucent.
- Mix broccoli, rice, onions, salt, pepper and as much vegan grated cheese as desired.
- Pour into greased 9 x 13 baking dish.
- Melt margarine and add crushed crackers.
- Layer cracker mixture on top and bake casserole for 30-35 minutes.
