Lenten Chocolate Doughnut Recipe
Last weekend, we had company which consisted of nine children including my own, so I decided that snacks were in order. For the adults, of course. They are so quick and easy! The only thing I should have done differently was double the recipe. I think we got just under two dozen.
I also tried a different glaze recipe and I like this one better than my old one.
Just wanted to share in case you needed a mid-fast snack! Enjoy!!
- 3 cups flour
- 2 t. baking soda
- 6 T cocoa
- 1 t. salt
- 2 cups sugar
- 3 T vinegar
- 2 t. vanilla
- 3/4 cup oil
- 2 cups cold water
Directions:
- Mix flour, soda, cocoa, salt & sugar in large bowl.
- Add vinegar, vanilla, oil & water. Mix well.
- Pour batter into greased cake or doughnut pan.
- Bake @ 350 degrees for 10-15 minutes.
- Let cool.
Chocolate Doughnut Glaze*(don't make ahead of time, must use immediately before hardens)
- 1/4 cup semisweet chocolate chips (I use Ghirardelli)
- 1 tablespoon margarine
- 1 tablespoon corn syrup
- 1 teaspoon hot water
In medium bowl, microwave chocolate chips, margarine, butter and corn syrup on half (50%) power for 1 minute, stirring frequently until completely melted. Stir in 1 teaspoon hot water, until the glaze is thick and smooth. Add another teaspoon hot water if the glaze is too thick. Use immediately to glaze doughnuts.At first I added the glaze with a spoon but then my sister-in-law suggested just dipping them in the bowl (which is also what the recipe called for, but I'm stubborn like that). Dipping them was much easier and less time consuming. :) Then add sprinkles!
