Feta & Olive Greek Flag
Can you believe tomorrow is Pascha already? Each year the time seems to move quicker and quicker. It's been a quiet, wonderful lenten season and though I am anxious for the celebration, part of me is sad to see this time go.We took an eight day pilgrimage to St. Anthony's monastery in Arizona, which as usual, was the perfect thing to do to recharge our spiritual batteries. DH also lost his sweet Pappou Petro a couple weeks ago and we sure would appreciate the prayers for him if any of you are inclined to do so. It has definitely been a time of reflection for us, with reminders everywhere that there is so much more to life than what we see and that every moment is to be cherished. I'll be trying hard to remember that all the things of this world are temporal and there is only one thing needed...Tomorrow when all of us sleepyheads roll out of bed after being exhausted from the all night Resurrection service, I'll be pulling several of my go-to recipes to make for our Paschal picnic.One of them is for this olive & feta Greek flag. Its been a hit for the past several years and I'll be throwing another one together tomorrow. I mentioned it here before (and on social media) but never actually posted a photo or any of the details here on the blog. It's so simple that even Ace made it for me the year before last. There really is no need for a recipe of any sorts but I'll include some quick directions below anyway. :)
Feta & Olive Greek Flag
Ingredients:
- feta
- kalamata olives
- dried oregano
- olive oil
Directions:Note: Depending on what size flag you make will determine how many olives and ounces of feta you will need. My dish is about 10 x 15, so I used about 60 olives and about 14-16 oz. of feta.
- Cut your feta into similarly sized rectangles and place in rows on your platter.
- Then fill in the other rows with olives making sure they all face the same direction to keep it uniform.
- Drizzle with olive oil.
- Sprinkle with dried oregano.
