Lenten Pancake Recipe
One of our favorite things to eat on fasting mornings are pancakes. Sometimes we eat them plain, sometimes we add fresh blueberries, bananas or chocolate chips and other times we get all crazy and mix some sprinkles into the batter! Or simply top them with sprinkles and fasting whip cream. ;)
Whole Foods has a delicious tub of Coconut Whipped Cream one that we recently tried (and loved!) or if you prefer it in a can, there's a great one at the Dollar Tree!
What I love the most about them is they're filling. Preparing fasting meals and snacks can be hard and time consuming, so anything that can keep my kids from screaming, "I'm hungry!" an hour after we finish a meal, is a-okay in my book.
I have a large glass jar that I premix the powder portion of the recipe and store it in my pantry, so all I have to do is add the wet ingredient(s) and pour them on the griddle! It's a huge time saver!
LENTEN PANCAKES
Ingredients:
- 1 1/4 cup flour
- 1 T sugar
- 1 T baking powder
- 1/2 tsp. salt
- 1 1/4 cup non-dairy milk, I prefer almond milk for this recipe
Directions:Mix all ingredients together in a bowl and then cook on a greased or non-stick skillet until golden.You can also add blueberries, bananas, chocolate chips or other favorites to the batter prior to cooking.Enjoy!
