lemon & blueberry trifle
christ is risen, friends! i hope you all had a most blessed and joyous pascha!one of the things i made for our pascha picnic this year was this lemon and blueberry trifle. it's a light and refreshing dessert and the lemon & blueberries make it perfect for spring and summer months. the recipe is so simple and it makes such a beautiful statement in the trifle bowl.lemon & blueberry trifleingredients:
- 2 3.4 oz boxes lemon pudding
- 8 oz whipped topping
- 1 8 oz cream cheese, softened
- 3 cups milk
- 2 loaves frozen pound cake
- 3-4 cups fresh blueberries
- lemon (for garnish)
directions:
- beat cream cheese, pudding and milk until smooth. fold in 2 cups of whipped topping.
- in trifle bowl, layer 1/3 of the cake, 1/3 of the pudding and 1/3 of the blueberries. repeat twice or until level with top of bowl.
- garnish with thin lemon slices and wedges, blueberries and a dollop of whipped topping in the center.
- cover and refrigerate until ready to serve.
