Lenten Hot Fudge Pudding Cake
This is one of my favorite Lenten desserts! It comes out delicious, you'd never know it was fasting!
Hot Fudge Pudding Cake
Ingredients
- 1 1/4 cups sugar, divided
- 1 cup flour
- 7 T Hershey's cocoa, divided
- 2 t baking powder
- 1/4 t salt
- 1/2 cup soy milk
- 1/3 cup margarine, melted
- 1 1/2 t vanilla
- 1/2 cup packed light brown sugar
- 1 1/4 cups hot water
- Cool Whip
Directions:Heat oven to 350 degrees. In medium bowl, stir together 3/4 cup sugar, flour, 3 T's cocoa, baking powder and salt. Blend in soy milk, butter and vanilla; beat until smooth. Pour batter into 8 or 9 inch square baking dish. In seperate bowl, stir together remaining 1/2 cup sugar, brown sugar and remaining 4 T's cocoa; sprinkle mixture evenly over batter. Pour hot water over top; DO NOT STIR. Bake 35-40 minutes or until center is almost set. Let stand 15 minutes; spoon into dishes, spooning sauce from bottom of pan over top. Garnish with Cool Whip.This is very easy and is delicious, it creates it's own "fudge" at the bottom! Enjoy!
